Making and eating homemade pancakes is a great pleasure for me and that is why I decided to share with this excellent recipe, which my mother gave me couple years ago. Homemade cranberry pancakes are delicious snack but not only. Moreover, they can be served for breakfast, lunch or even dinner. The recipe is very easy and it takes only about forty minutes to make the batter and cook them.
To make cranberry pancakes you will need few rather cheap ingredients, which you can buy in your grocery store. Remember that it is very important to have fresh ingredients. The taste is much better and you always know that afterwards your stomach will not cause you any problems. Another important rule is that you cannot mix the batter with electric mixer. Use spoon instead of this. You do not have to whisk the batter very carefully. It can even have some lumps remaining. They will disappear during the cooking. I am sure that thanks to following these simple steps, your pancakes will be delicious. Here is the recipe for homemade cranberry pancakes:
Ingredients:
½ cup of all-purpose flour
1 cup of cranberries, chopped
2 cups of vanilla yoghurt
1 cup of yellow corn meal
½ teaspoon of baking powder
1 teaspoon of baking soda
½ teaspoon of salt
¼ cup of maple syrup
How to make homemade cranberry pancakes:
First, take cranberries and soak them in the maple syrup for about 8-12 hours.
In one bowl, mix yogurt, flour, corn meal, baking soda and baking powder and salt.
Next, add maple and cranberry syrup to the mixture and whisk. Do not over mix the batter. It can have some lumps remaining.
Heat a frying pan or a griddle over medium high heat and brush it with few drops of oil or butter.
Pour about ¼ cup of the batter on the surface of the frying pan and cook pancakes on one side for about 2-3 minutes or until golden brown.
Flip and cook again for about 1-2 minutes or until golden brown.
Serve pancakes warm.
